Spiced Roasted Sweet Potatoes

These roasted sweet potatoes taste like nature’s candy: sweet, creamy, and a little caramelized.

I love sweet potatoes so much I could eat them every day!

For Thanksgiving, my mom used to season them with cloves, cinnamon, and sometimes brown sugar. Then she would top them with mini marshmallows.

Obviously, as a kid I loved that gooey sweet topping.

But as an adult I’ve come to prefer sweet potatoes with minimal interference. A little olive oil, light seasoning, and roasting at a high temp brings out its natural sweetness.

Spices for roasted sweet potatoes

  • Savory: 2-3 garlic cloves minced + 1/2 tsp dried thyme
  • Sweet: 1/4 teaspoon each of ground cinnamon + ground cloves + nutmeg + ginger
  • Orange: 1-2 tablespoons orange juice + zest of one orange

How to Make Oven roasted sweet potatoes

My recipe only uses 2 large sweet potatoes which makes a small batch enough for 2-4 people. It’s also as simple as it gets!

Start by preheating the oven to 425°F.

Then wash, peel, and chop the potatoes into cubes or wedges. Sprinkle with salt and pepper and your sweet or savory seasoning of choice (see above).

Finally, drizzle with a few tablespoons of extra virgin olive oil.

Mix all the ingredients together and place in a small roasting pan, baking dish, or sheet pan.

Roast for 45-60 minutes, or until the edges become caramelized. The potatoes will be soft and creamy on the inside and crispy and on the outside, with plenty of browned bits!

If making for Thanksgiving, the potatoes can be cooked 1-2 hours before eating. First roast them for about 45 minutes. Then 15-20 minutes before eating, put them back in the oven until caramelized.

Enjoy these roasted potatoes on Thanksgiving with turkey and stuffing, or on another evening with pork, chicken, or beef.

For a tasty vegetarian meal, stir these roasted potatoes into rice, quinoa or couscous, or toss with a delicious salad along with some toasted nuts.

They’re so good you might even want them for dessert!

Ingredients

  • 1-2 tbsps (15-30ml) olive oil
  • salt and pepper to taste
