Skillet Chicken Sausage and Rice

With only 3 major ingredients, this dish can’t get any simpler!

I needed an easy school lunch for my kids that didn’t involve more bread!

Sandwiches are the typical go-to for school lunches since they are quick and involve no cooking.

However, my kids get easily sick of foods, especially if it’s something they have to eat every day. And if they stop eating bread, well then, I’d really be out of options!

For an alternative to sandwiches, I wanted to come up with a complete meal, one with starch, protein, and vegetables. Something I could just reheat in the morning and put in their thermoses.

I decided to keep it simple with sausage and rice, and for the veggie, bell pepper.

Normally, I would use leftover cooked rice. However making rice in the skillet after sautéing the sausage and peppers helps it pick up yummy flavors.

How to Make Chicken Sausage and Rice

In a large skillet, heat some olive oil. When the oil starts to shimmer add sliced sausages, about 2-3 links worth.

Sauté them on medium-high heat for 5-10 minutes or until browned on both sides. Set aside in a separate bowl.

Into the same skillet, add 1-2 bell peppers that have been sliced or diced. Sauté for another 5-10 minutes, adding more olive oil if needed. Transfer to the bowl with the sausage.

Once again using the same skillet, add rinsed rice along with some butter if desired. Give it a good stir so the rice gets coated with the fat and flavors.

Then add in salt, turmeric, and water or broth. The turmeric turns the rice yellow, making it fun and appetizing for kids especially when mixed with bright red peppers.

Cover the rice with the lid and cook for 15 minutes or according to the directions on your rice package.

Once the rice is cooked, take off heat and fluff with a fork. Stir in the sausage and vegetables. You can pop the lid back on for 5 minutes to keep everything hot.

When making it for school, I like to keep it simple and use only minimal ingredients.

However, for a family dinner I sauté onions and garlic along with the peppers, and throw in some peas for texture and extra protein and fiber.

It’s the perfect dish to include in your dinner rotation because you can easily change it up. Try different spice combos or sauces. Or mix and match different sausages and vegetables.

Skillet Chicken Sausage and Rice

Ingredients
  

  • 2-3 links chicken sausage, sliced or diced
  • 1-2 whole bell peppers, sliced or diced
  • 1 cup dry rice, rinsed (I used basmati, but any kind is fine)
  • 2 cups water and/or broth (or amount recommended on rice package)
  • pinch turmeric
  • olive oil and/or butter
  • salt & pepper

Optional Ingredients:

  • 2-4 cloves garlic, minced
  • ½ onion, sliced
  • 1 cup frozen peas

Instructions
 

  • In a large skillet (with a tight-fitting lid), heat some olive oil. Add the chicken sausage and sauté on medium-high heat for 5-10 minutes or until brown. Set aside in a separate bowl.
  • Into the same skillet, add the peppers (plus garlic, onion, peas if using) and sauté another 5-10 minutes. Add more olive oil if needed. Transfer to the bowl with the sausage.
  • Now, add the rinsed rice into the skillet, along with some butter if desired. Stir to coat the rice with the oil and flavors. Add salt, turmeric, and water. Cover with lid and cook for 15 minutes or follow directions on rice package.
  • Once rice is cooked take off heat and fluff it with a fork. Stir in the sausage and vegetables. You can pop the lid back on for 5 minutes, so the meat and veggies can heat up more.
