Salmon with Cilantro Garlic Sauce and Tomatoes

If you are in need of a heart healthy salmon recipe, look no further. Salmon and a few simple ingredients come together for a colorful and flavorful dish.

I was given this delicious recipe from a co-worker more than a decade ago.

My co-workers and I often shared recipes with each other and I loved trying foods from their different cultures.

The interesting thing about this salmon dish is that it uses similar ingredients found in Indian cooking: cilantro, lemon, garlic, and tomatoes.

Of course, the Indian in me wanted to add ginger and chilies, but I decided to stay true to my friend’s recipe.

But this recipe is not only delicious with savory and bright flavors, it is also great for your heart!

What Makes These Ingredients Heart Healthy? 

  • Salmon & Olive Oil: Contain omega-3 fatty acids which can lower blood pressure, LDL (bad) cholesterol, triglycerides, and inflammation.

  • Tomatoes: Contain lycopene, potassium, and flavonoids, which may reduce inflammation, blood pressure, and risk of heart attack and stroke.

  • Garlic: Contains antioxidants, phytochemical, and vitamin B6, which can potentially lower cholesterol and reduce plaque in the arteries.

How to Make Salmon With Cilantro Garlic Sauce

This dish couldn’t be easier to make. Simply blend together 1 cup fresh cilantro, 2-4 cloves garlic, 2 tablespoons olive oil, and the juice of 1 lemon until it becomes a beautiful green sauce.

Then pour over salmon in a baking dish and top with grape or cherry tomatoes.

Bake at 350°F until the salmon flakes easily with a fork. The tomatoes will have cooked down and the sauce will be a deeper green. Serve with an extra squeeze of lemon juice and cilantro.

You can make this dish even more heart healthy by serving it with a high fiber whole grain like brown rice, whole wheat couscous, or bulgur wheat.

  • 2 medium salmon fillets
  • salt and pepper to taste
  • 1 cup cilantro
  • 2 tbsps (30ml) olive oil
  • juice of 1 lemon
  • 2-4 cloves garlic
  • 1 cup grape or cherry tomatoes or 1 large tomato, sliced


  • handful capers


  • Preheat oven to 350℉. Place the salmon in a baking dish and season with salt and pepper.
  • In a small blender, add the cilantro, olive oil, lemon juice and garlic. Blend till completely smooth. Pour the cilantro-garlic sauce on top of the salmon. Then add tomatoes (and capers if desired). Bake for 45 minutes or until the salmon flakes easily. Serve with rice or couscous.
