Chickpea Salad with Tahini Dressing

This salad has all the good things that go into hummus, plus a little extra!

One of my favorite vegetarian dishes is hummus, especially when it’s stuffed into pita bread along with fresh veggies and feta.

This salad tastes just like a deconstructed hummus sandwich or like a hummus plate all chopped up.

First, the yogurt tahini dressing is made with most of the ingredients that go into hummus: tahini, lemon juice, and garlic.

Then it’s poured on top of a mix of chickpeas, cucumbers, onions, tomatoes, and avocado. The salad is tangy and salty, as well as creamy with a bit of crunch.

How to Make Yogurt Tahini Dressing

The tahini dressing makes about 4 servings and can be made in a jar or bowl.

To make in a jar, add a few tablespoons of tahini, water or yogurt, and lemon juice into a jar.

Add in a little olive oil, some minced garlic, a few teaspoons of honey if desired, and a pinch of cumin and cayenne. Don’t forget salt and pepper to taste.

Then close the lid and shake the jar until the ingredients emulsify and become creamy.

Alternatively, place all the dressing ingredients in a bowl and whisk well.

Taste and adjust seasoning, or add more olive oil for extra richness.

Store the dressing in the fridge until ready to use. It can be made several days in advance.

How to make chickpea salad

When you’re ready to eat the salad, place 1 drained can of chickpeas in a large bowl. To this, add diced cucumbers, tomatoes, and onions.

Drizzle on some of the dressing and toss gently. Then top with feta and diced avocado. Serve with a sprinkle of parsley and extra dressing on the side.

How to bulk up this salad

This salad is light enough to serve as a side or a small meal. But if you want to bulk it up or make it more filling, here are some suggestions:

  • First add a ton of greens like spinach, romaine lettuce, or your favorite salad mix.
  • Then bulk it up with some cooked pasta or rice, or other whole grains like whole wheat pita or tortilla.
  • For extra protein, add grilled chicken, steak, shrimp, tuna, or hard boiled eggs.
  • And add more veggies like grated carrots, jicama, or pickled beets.

Ingredients
  

Yogurt Tahini Dressing:

  • 2 tbsps (30ml) tahini
  • 2 tbsps (30ml) yogurt
  • 1-2 tbsps (15-30ml) lemon juice
  • 1-3 tsps olive oil
  • 1-2 cloves garlic, minced
  • 1-2 tsps honey, optional
  • salt and pepper to taste
  • 1-2 pinches cumin and/or cayenne, optional

Chickpea Salad:

  • 1 can chickpeas, drained and rinsed
  • 2 small seedless cucumbers, diced
  • 1 cup cherry or grape tomatoes, halved
  • ½ cup diced purple onion, optional
  • ½-⅔ cup feta, optional
  • 1-2 small avocados, diced
  • parsley, optional

Instructions

  • Place all the dressing ingredients in a clean jar. Close the lid and shake until the ingredients emulsify and become creamy. Alternatively, place ingredients in a bowl and whisk well. Taste and adjust seasoning, or add more olive oil for extra richness. Store in fridge until ready to use. Can be made several days in advance.

Chickpea Salad:
